Ice cream for lunch? SURE!

Not much is better in the summer than a cup of something cold to cool off, like ice cream, ice pops, or even ice cream sandwiches -- and when those chilly treats are made with quality ingredients and if you're mindfully indulging, an occasional treat can fit into part of a healthy diet. 

But let's be honest: not all foods are made with quality ingredients (especially well known treat food brands) and not all the time do we consciously indulge and pay attention to the flavors and textures of the food, which is why sometimes ice cream shouldn't be a fit. 

So when you crave that "something cold," yet want to keep it real, nutritionally speaking, you can have ice cream for lunch!  Check out this recipe for Banana Vanilla "Nice" Cream! It has 3 ingredients, only naturally-occurring sugars, and a healthy dose of protein.

One frozen banana adds sweetness, whey protein powder delivers protein, and the 1/2 cup of organic whole milk adds a creamy texture. This milk is also fortified with DHA, a nutrient that supports brain and eye health.  Simple, healthy ingredients! 

Banana Vanilla "Nice" Cream

Ingredients:

  • 1 banana, frozen
  • 1/2 cup organic whole milk
  • 1 serving organic, grass-fed whey protein powder - bourbon vanilla
  • Ice

Directions

  • Blend ingredients together in a high speed blender
  • Add ice to thicken to your preferred texture
  • Enjoy!

...and did I mention?  If you prefer this smoothie-style, just add less ice!  You can also make this your own by adding your favorite toppings, like pecans, hemp seeds, coconut, or chia seeds.  I added cacao nibs overtop to add a rich, chocolate flavor.  YUM!
