Easy, Healthy Pumpkin Pie Waffles

Fall is HERE and that means pumpkin is in the air! Mmmmmm.

Pumpkin is a healthy superfood in its own right - it's full of vitamin A and fiber.  Plus, it's delicious and works wonderfully when mixed into morning favorites like oatmeal, yogurt, and chia pudding.

But if you're waffling over breakfast every morning with questions like "should I have it?" or "do I have enough time?" or "can I have pumpkin in the morning, healthfully (beyond a modified-PSL)?," I have your answer and it is "YES!"  

Try the recipe for these Easy Pumpkin Pie Waffles once, and you'll be hooked until winter (or spring!) rolls around. 

Easy Pumpkin Pie Waffles

(Total Time 10 minutes, Serves 1)


  • 1/3 cup pure pumpkin puree
  • 1/3 cup flour (I used Bob's Red Mill gluten free biscuit and baking mix)
  • 2/3 cup unsweetened original almond milk (or other nondairy beverage)
  • A "shake, shake, shake" of cinnamon, to taste
  • 1 Tablespoon nut butter


  • Combine pumpkin puree, flour, almond milk, and cinnamon. 
  • Pour mixture into waffle iron, cook until you reach desired doneness (I like my waffles crispy on the ends!)
  • Remove from waffle iron and top with one tablespoon of your favorite nut butter.

They say waffles are pancakes with abs...I like abs, so I'll keep this recipe in waffle form for now, but if you try it as a pancake let me know how much you love it in the comments below!
